Did Somebody Say Steak?

I was shopping for a new friedge with my mom at a large local appliance store when I ran into some excellent tips for cooking everyone's favorite meat. The appliance store brings in local chefs to cook and serve food using their kitchen ranges. One of the stations had the head chef from Grill 23 which is generally regarded as the best steakhouse in Boston (better than Ruth Chris and even the Capital Grill).

Anyway, while my Mom looked at fridges, I sat at the Kitchen counter and ate three portions of some of the best tenderloin I have ever had. I spoke with the chef and got some great pointers for cooking steak.

The guy used a rub of Sel Gris (Grey sea salt you can buy at whole foods) and smoked paprika. It was amazing.

I also recently learned a recipe for an excellent steak sauce. Its quick and easy. After you cook a few steaks in the frying pan, take the steaks out and pour in 3/4 cup of beef broth. This is called deglazing. It takes up the little bits of meat in the pan and starts to make a sauce. Then pour in 3 tablespoons of Cognac and 3 teaspoons of green peppercorns. Stir everything together and then reduce the heat to med/low. Then slowly pour in 3/4 cup of cream stiring constantly to make sure the cream doesn't curdle. Keep stirring with the sauce on low heat for about 5 min or until the sauce can coat a spoon. I had it tonight for dinner and liked it so much I thought it deserved a blog post. Its also good in the middle of a baked potato.

Anyways, I hope you try the recipe and enjoy it. And remember, Kill all vegitarians.....except Dana...she can stay.


On another note I wanted to say that I agree with Jared about Bill Simmons. While I think the Spurs are a bunch of pussys, I am excited to read a Bill Simmons article that I can judge on its merrits and not just agree with because he writes about my favorite teams.
